Snickerdoodles

Like I don't have enough cookies in our house......Chip and I were buying Girl Scout cookies from all the neighbor girls and we didn't know each of us had....so we ended up having tons of cookies!!!! Well, I'm going to my re-sheduled scrapbook crop tomorrow night and I wanted to bring a little treat. Last week, when it had cancelled I made chocolate peanut butter rice krispie treats...but after 5 batches of them in 3 weeks....I've overdosed on them! So Cubby and I decided to make Snickerdoodles.

Can you believe this is only the second time I've made them?? The first was just a month or so ago when I remembered seeing them on my real life friend marzipan's blog...if you haven't checked her out yet click HERE to see for yourself how amazing she is!


Here's her recipe:

Snickerdoodles
adapted from Martha Stewart's Cookies


2 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter, room temperature
1 1/2 cups sugar
2 large eggs


For rolling:
2 tablespoons sugar
2 teaspoons ground cinnamon


Preheat oven to 350 degrees F. Whisk together the flour, baking powder, and salt in a medium bowl. Place butter and sugar in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium speed until pale and fluffy, about 3 minutes. Mix in the eggs, one at a time, until fully incorporated. Scrape the sides of the bowl with a rubber spatula as needed. Reduce speed to low and gradually mix in the flour mixture just until combined.


Stir together the 2 tablespoons sugar and 2 teaspoons cinnamon in a small bowl. Shape dough into balls. Using a cookie scoop makes sure they are uniform in size. Roll the balls in the cinnamon sugar and place on a Silpat or parchment-lined cookie sheet about 2 inches apart. (Larger cookies will need more space between them.)


Bake cookies until edges are golden, about 12 minutes. Let cool on sheets on wire racks.

And he loves to help.



When we were ready to roll the cookies in the sugar and cinnamon he said, "oooh, I forgot to put my cooking outfit on!" So he got it out of the drawer and said, "Now I'm Chef Pup!" Chip gets REALLY nervous when he wears this and thinks I make him put it on.....but seriously....he just wants to himself! He and Cindylou love to watch Cake Boss so maybe that has something to do with it......



The hat is waaaaay too small......can you see the velcro strap dangling on the side??



And of course while they were baking he had to help cleanup....uhhh, lick the beater :)



They turned out sooooooooo good! I can't wait to share them tomorrow night!
